I Miss the Food Network…

The other day I cooked a delicious healthy meal for myself! I baked one of the Orange Roughy fillets that Dad bought me for part 2 of my Christmas gift (shopping at Trader Joe’s!) It was really easy, too! Here’s what I did:

First I cut some thin slices of lemon and put 2 on a piece of aluminum foil. Then I put the fillet on top of the lemon and put one more on top of it for good measure. (It may have been a tad lemony, but I still liked it!) Then I drizzled a tiny bit of olive oil over the fish and added a splash of Pinot Grigio I picked up to have with the meal. I also sprinkled some “Italian Seasonings” on it so it would have some green speckles on it. Then I wrapped it all up in the foil and stuck it in my toaster oven.

Before I go on, I’d like to mention how cool baking in my toaster oven is. Whether you’re toasting or baking, you still have to turn the timer to make it go on. So, when you’re baking, you set it for the tempurature you want, and then turn the dial to how long you want it to cook, and then when the time’s up it “ding!”’s and turns off! How cool is that?!

Ok, so while the fish was baking I found enough stuff in my fridge to make a salad: lettuce, carrots and an apple. Making a salad for one person is really easy – you just cut up what you need and stick the rest back in the fridge. Except for the other half of the apple. That wouldn’t keep well, so I cut the rest of it up into slices and had it as a side dish.

Something else that I’ve discovered is really easy: cooking one serving of vegetables. For my second side-dish I cut up some squash (also found in my fridge – still fresh, too!), stuck it in a bowl with some water and put it in the microwave for about a minute. Easy!

I couldn’t believe it. I was sitting down to a complete, healthy, meal 30 minutes after I walked in the door! How come when I make other meals that seem to be simpler they take twice as long to make?

Anyway, I was so proud of myself I took pictures. Go me!
